Cotton Candy Grapes Preserved in Chardonnay Syrup

Haven’t made these pickled grapes for years, but this new grape variety has inspired their return. You may have encountered Cotton Candy Grapes by putting what you thought were regular green grapes in your cart, then having your eyes pop when you see the cost at the register - then getting them home and realizing they’re worth it.

This is not a genetically engineered fruit, but the end of a decades-long natural hybridizing, an attempt to restore flavor the breeder felt had been lost in newer varieties. For this he reached back to the Concord grape, and spent years teasing the flavor back out. The results are stunning, and a perfect complement to my complex syrup. Hints of apple, lemon, white pepper, vanilla, basil, honey, bay leaf, cinnamon, anise, cardamom, bergamot and Champagne scented geranium.

Delicious with cheese, chicken or fish, in salads, on ice cream. For main dishes serve on the plate like a pickle or chutney, or in a little bowl on the side with a spoon to enjoy the syrup, which is every bit as good as the fruit.
