Considering their ubiquity 50 years ago it is stunning how completely Spiced Crab Apples disappeared from the American diet, a victim of the death of home canning and commercial versions with lurid red coloring and no flavor. They became a joke, then forgotten. My farm visits are now mostly in summer and too early for apple anything, but occasionally there will be Whitney crab apples, a reminder of the pickles my grandmother made from them. A few years back I decided to revive this tradition.

I had Grandma’s recipe but knew I'd have to improve on it to withstand the impossible perfection of memory. First I took out the water and added apple juice, then some favorite spices. One Farmer's Market customer was reduced to tears; "I haven't had these since my grandmother died 50 years ago!" Here is your chance to renew old memories or make new ones. Enjoy with cheese or main course meats, pork, ham, turkey. For the novice: you will place them on the side of your plate and pick them up to eat them off the core as you would any apple.

Ingredients: crab apples, apple juice, sugar, cider vinegar, spices.

Sugar cooked golden and rich heavy cream find a perfect match with ginger and my favorite spices in this elegant caramel sauce, touched with a hint of sea salt. That no one else has yet combined these flavors is, I think you will agree is a great oversight! Enjoy with apples or pears, on ice cream, other desserts. I also urge you to use this for my Pears in Puff Pastry, see recipe page. I even like it on baked squash! Use out of thejar or heat gently. Note: I have avoided using corn syrup here, but this means it may crystallize; like honey, just re-heat to melt the crystals.

Rich creamy Swiss milk chocolate blended with malt, triple Madagascar vanilla and Jack Daniels whiskey. With milk and ice cream in a blender, makes a fantastic malt!

The red-juiced blood orange is chemically similar to strawberries & raspberries, giving this syrup a berry/citrus tang. Use in hot or iced tea, on fruit or ice cream, cottage or other cheeses, toast, pancakes, breakfast cereal, drizzled over desserts, in yogurt, whipped cream, salad dressings.

The Rangpur lime is a sour Mandarin. A sharp citrus zing, limey but smoky. Use in gin & tonics, Margaritas, sparkling water, hot or iced tea, on melon, cottage or other cheeses, in yogurt or salad dressings, rice pilaf, marinades, drizzled over fish.

I still love Meyer lemons, but they are comparatively low in acid, and lately I’ve been craving the sharp zesty bite of the market standard, the Eureka. Lisbons are a similar strain, but most Eurekas are picked so early they’re dry and bitter, while the Lisbons I got from my grower were fully ripe and full of puckery juices. No blending here–just a pure, full, bright lemon punch! It’s already found its way into my tea, I imagine it a winner in my lemon pound cake, and look forward to a classic lemon drop cocktail
