Heritage Apple Sauce
The orchard at the family farm was planted around 1900, when Grandfather bought the land and built the first house. Of the original 30 or so trees, a good ten of them are still alive and producing - meticulously pruned and cared for by my brother. We now have no idea of the name of the most favored cooking apple, which made its way into all my Grandma's pies and sauce, but they remain the best I've ever had, an intense scent and flavor of apple. There are 2 schools of apple pie - one, reared on Granny Smith apples or commercial pie filling, think the slices should stay hard and chewy, impervious to cooking, and the other who think the fruit should cook down and soften. These dissolve beautifully, and so are a perfect candidate for sauce, as well as Grandma's apple pie. Warm this to top ice cream, and you're almost there. It's not just apple sauce, it's the best you've ever had.
Ingredients: Apples, sugar, cinnamon.
